I made a big batch of these lemon coconut bliss balls because my daughter is obsessed with them! She can’t get enough, and they’re the perfect little bite-sized snack.
I love that they’re super simple to make using ingredients we already have in the pantry, so no extra trips to the store.
These are much more cost-effective than buying the expensive packaged versions, and they taste so much better too!
With just a touch of nut butter and a zesty lemon kick, they’re the ideal chewy snack for busy days.
Plus, they’re perfect for popping in the lunchbox or keeping on hand when we’re rushing out the door. It's a total win-win: delicious, budget-friendly, and totally loved by my little one!

Ingredients
Double Batch: Mellow Lemon Coconut Bliss Balls (No Dates)
2 cups rolled oats (blitzed into oat flour)
1 cup desiccated coconut (plus extra for rolling)
Zest and juice of 4 juicy and sweet organic lemons
2 tbsp chia seeds
¼ to ½ cup nut butter
4 tbsp honey or maple syrup (¼ cup)
4 tbsp coconut oil (melted – ¼ cup)
Pinch of salt
Preparation
Blend oats into a fine flour
Zest the lemons.
Mix dry ingredients: In a large bowl, combine oat flour, desiccated coconut, chia seeds, lemon zest, and salt.
Add wet ingredients: Stir in nut butter, lemon juice, honey or maple syrup, and melted coconut oil.
Adjust texture: Mix everything until it forms a dough. If it’s too soft, add a little more coconut.
Roll into balls and coat with extra coconut.
Chill in the fridge for at least 30 minutes until firm.
